/ MY STORY

Hi! My name is Kim Gradberg and I am the founder of It's Gluten Free. I have been lactose intolerant for over 30 years and have been living a gluten free lifestyle since 2011. I am a wife and a mother to two children. My family and I reside in Norfolk, Nebraska. When we moved to Norfolk in 2020 I knew I was going to have trouble finding gluten free products to support my diet needs. But as most people who struggle with food allergies know, you learn to make do with what is available and more often than not, go without. Parties and even the coffee hour at church can be terribly disappointing.

And that is where my story truly begins. With church and donuts. See, once a month, during the school year, a member family would bake homemade donuts as part of a year long fundraiser for the youth ministry. Those donuts looked and smelled so good and I couldn't have any of them. So I decided one Sunday to bring in a dozen homemade gluten free donuts. I wasn't the only gluten intolerant member after all! And they were a hit!

 

One Sunday, I had baked a bit too much and posted them on a local resale Facebook page. I had a dozen people interested within minutes. Donuts became banana bread, followed by cupcakes and cookies. Within a very short time, It's Gluten Free was created. In a small communities like ours, the need for gluten and dairy free resources is skyrocketing. There is nothing I enjoy more than serving my community and seeing the joy on my customers faces when they discover that my brand exists and that it exists locally.

Since the donut days at church, I have been able to make several special occasion cakes, sandwich breads and more! I maintain a weekly presence at the local Farmer's Market as well as large events around the area. The goal of my business is to reach all of the gluten free community of Northeast Nebraska and to provide an fresh, safe, and delicious alternative to the often disappointing frozen varieties. My goal is for the gluten free community to be able to always have a muffin with their coffee at the local coffee shop or a custom cake for their special event.
